How to: Make Veggie Stir fry

1.pngMy go-to meal at the moment is vegetable stir fry with rice noodles; it’s quick, easy, healthy and delicious.

Step 1 – choose your ingredients. In the picture you can see I went for carrots, broccoli, cabbage, spring onions and pepper to go along with my rice noodles.

Step 2 – Prep your veg. Have as much as you like just make sure it is all chopped to your liking.

Step 3 – Heat your frying pan on a medium heat and add some sunflower or corn oil.

2Step 4 – Add your veg in stages. I added broccoli first as it takes the longest to cook through and the cabbage last as it cooks very quickly. Once everything is added keep stirring it all through, add your seasonings (I added salt and pepper to mine).

Make sure to add oil accordingly throughout to make sure you create the steam necessary for stir fry and also to ensure you don’t burn your veg. If you are conscious about the oil making this a less healthy dish you can add water throughout instead. I did a bit of both (oil for taste and water for steam).

Step 5 – Once the veg is cooked through to your liking put the stir fry on a low heat, or even take it off the heat while you attend to the noodles. 3

For the rice noodles I had, I had to cover them in boiling water (from a kettle) for 3 minutes and drain them before adding them to my veg. However, you can buy fresh rice noodles which you can put straight into the frying pan to heat up.

Step 6 – Once the noodles are done, add them to the veg and mix through. Take the pan off the heat (if you haven’t already) and serve.

I prefer drier stir fry but you can add a sauce to if you like and switch out the veg and noodles. I often have stir fry with rice or cous cous.

skjdfsWhat I’m reading – I am currently reading Paper Towns by John Green. I thoroughly enjoyed the film so I thought I would pick up the novel. The story is about a girl named Margo Roth Spiegelman and her neighbour Quentin Jacobsen. The blurb reads as follows: ‘Quentin Jacobsen has always loved Margo from afar. So when she climbs through his window to summon him on an all-night road trip of revenge he cannot help but follow. But the next morning, Q turns up at school and Margo doesn’t. She’s left clues to her disappearance, like a trail of breadcrumbs for Q to follow’.

What I’m watching – With the university year finished, an abundance of time and very little to do, I 3rd-rock-from-the-sun.jpghave taken to watching a lot of TV. Currently I am watching Friends, 3rd Rock from the Sun and The Big Bang Theory. All three I would recommend, especially if what you’re after is a light watch which you don’t have to put a lot of energy or concentration into.

What I’m eating – STIR FRY. I think I’m obsessed with Stir Fry… is that weird? At least it’s healthy and easy to make. I make stir fry with cabbage, pepper, onion, broccoli and carrots with either rice noodles, cous cous or rice. I’m a vegetarian so I don’t add meat.

61bsOddrJwL._SX258_BO1,204,203,200_What I’m reading – This month I have been reading The Shadowhunter’s Codex by Cassandra Clare and Joshua Lewis which is a side novel to The Mortal Instruments series. This book is quite enjoyable and acts as a handbook to new Shadowhunters (and also has Clary’s notes all over it).

I have also been reading The World According to Wolverine by Matthew K. Manning which is a fun book all about the comic book character of Wolverine.cc514bd2-9de1-4af6-840e-5dc07bd07b54

Both of these were presents for my birthday and I’m enjoying them thoroughly.

What I’m watching – I have been watching Once Upon A Time (I’m obsessed), Friends (also obsessed), Shadowhunters and The Big Bang Theory!

CdsQaTpUkAAlnfeWhat I’m subscribing to – No new subscriptions but I have definitely fallen in love with Wheezy Waiter’s new style of video. He used to do skits and sit-down vlogs, but now he has taken up a daily-vlog style with some artsy cuts. Very enjoyable, do check him out.

What I’m listening to – The top few tracks this month, between my friends and I, are: Broken Generation by Of Mice and Men, X G63587518307449407470197420_TwentyOnePilots-StressedOut15on Give it to Ya by DMX (from Deadpool), Stressed Out by Twenty One Pilots and finally, Judgement Day by Stealth (from Suits).

What I’m eating – Too much. I’ve eaten a lot of cake this week… let’s leave it at that.

What I’m: January

stardustWhat I’m reading – Lately I’ve been much better getting books finished. I’ve finished the 6th Mortal Instruments book: City of Heavenly Fire. I, then, moved on to Carrie Hope Fletcher’s book: All I Know Now.

What I’m currently reading is Stardust by Neil Gaiman. This book is set in the Victorian era starting in the unusual village called Wall. This village is separated from a whole other world, the land of Faerie, where Tristan, the young protagonist, is from. He finds himself adventuring off into this new land, zdda sent there by his true love Victoria to find a fallen star. There is also a film based on this novel, information for which, I will link here. It is a truly beautiful film with such a wonderful cast.

What I’m watching – I have recently been watching Once Upon A Time Series 1 and 2. I love this show because it has a unique concept: all fairytale characters have been cursed and therefore pulled from their world and dropped into ours. A 28-year-old Emma Swan, daughter of
Snow White and Prince Charming, is the saviour: the only who can break their curse, but only if she believes. It’s a fantastic show.tumblr_nudpu8BP491uslmbwo1_1280

Other than OUAT, I’ve been watching good ol’ Friends. There’s no use in me explaining that show because if you don’t know it you’ve clearly been living under a rock. However, if you don’t know the show, you should definitely look it up. It’s classic, and fantastic in every way.

What I’m listening to – I have been listening to a lot of Young Guns recently, and I absolutely adore their music. My favourite song of theirs in Bones, I’ll insert the video below.

November ‘What I’m’

17012621_1300x1733What I’m watching – Currently in my spare time I’ve been watching Happy Endings, which I think is the same as last month too, it’s a comedy about five friends that live in Chicago. I just love the series and I love the characters!

Additionally, I’ve started re-watching Suits (starring Gabriel Macht and Patrick J. Adams). If you’re unfamiliar, Suits is a show about Mike Ross, a brilliant college-dropout, who, after a drug deal gone wrong, finds himself in the office of New York’s best lawyer, Harvey Spectre, who gives him a job.

I nearly forgot all about Doctor Who, series 9 is airing currently and I’m loving it, and I’m a Celebrity, which is also airing at the moment.

What I’m subscribing to – This month I have been watching so much Cereal Time, a breakfast show hosted my Charlie McDonnell and Jimmy Hill. This channel is rather silly but very entertaining to watch especially if you’re already a fan of the channels Charlieissocoollike and Jimmy0010.

jonnI’ve also just finished watching Jonny’s video on the channel ‘I read books in nightclubs’ and thought it was a good time to recommend his videos again. So please check out both of these channels if you haven’t already.

What I’m listening to – My favourite song right now, which has been played on repeat, is Ocean Drive by Duke Dumont.

However, my favourite band right now is Busted. Now, if you know me, you’ll know that I love McFly and I’ve subsequently loved McBusted who have been touring and making music together over the last couple of years. All this time I’ve loved Busted, of course, but I would never have believed that the bBusted-Reunionand would reunite for another tour, let alone make new music together… but alas, the impossible is reality and in May of 2016 I am going to see Charlie, Matt and James play as Busted with both old and new songs! I’M SO EXCITED. I GET TO SEE CHARLIE LIVE FOR THE FIRST TIME!

What I’m eating – Brioche. This may seem totally random but today I tried Brioche for the first time ever and will now be buying it much more regularly. That is all.

What I’m readingThe Mortal Instruments: City of Heavenly Fire (Book Six) by Cassandra Clare. In August I was in the midst of reading Book Three and I’m still thoroughly enjoying this series. The series is reminiscent of some of my favourite books and interests. It is about a group of young adults in a fantastical world of werewolves, vampires, faeries, warlocks and a race of Shadowhunters: descended from Angels, as they step forward into a time of war, uncertainty and danger.

What I’m watching – This month I’m all about TV Shows and I’ve been watc282288F800000578-3060785-image-a-48_1430492966005hing Happy Endings Season Three, after successfully finding it on Amazon Instant. I love this show to pieces, despite its only three season airing before it was cancelled, and the characters are so loveable. I’ve also been re-watching Season One of Once Upon A Time, another show I totally adore. In case you’re unfamiliar, this show is all about fairytale characters torn out of their world and thrown into ours by an evil Queen. I totally recommend both shows.

What I’m subscribing to – This month I’ve been enjoying Fleur De Force’s vlog channel, FleurDeVlog, as she has been and will be vlogging every day in October. I’ve also been enjoying Strawburry17 as the channel has been revamped for Halloween with6afe69f6546810140294c658cd969313 a range of new spooky shows.

What I’m listening to – So much! I’ve been listening to loads of music as of late. But I’ve recently gotten back into bands such as Metric and Nirvana. If you’re unfamiliar with either of these artists/bands I recommend checking out Satellite Mind and Help I’m Alive by Metric and Smells Like Teen Spirit and Come As You Are by Nirvana.

What I’m eating – Recently I became a student. Yes, a student. Part of this role entails trying to eat cheaply. I’m also a vegetarian. In all of this, I have been enjoying Cous Cous as a regular part of many of my meals. I have been especially enjoying buying bags of plain Cous Cous which I can add to salad or rice (I hope that isn’t too weird) and I’ve been eating it on its own (okay, that’s weird, I know) with a seasoning of salt and pepper. Delicious.
