How to: Make Veggie Stir fry

1.pngMy go-to meal at the moment is vegetable stir fry with rice noodles; it’s quick, easy, healthy and delicious.

Step 1 – choose your ingredients. In the picture you can see I went for carrots, broccoli, cabbage, spring onions and pepper to go along with my rice noodles.

Step 2 – Prep your veg. Have as much as you like just make sure it is all chopped to your liking.

Step 3 – Heat your frying pan on a medium heat and add some sunflower or corn oil.

2Step 4 – Add your veg in stages. I added broccoli first as it takes the longest to cook through and the cabbage last as it cooks very quickly. Once everything is added keep stirring it all through, add your seasonings (I added salt and pepper to mine).

Make sure to add oil accordingly throughout to make sure you create the steam necessary for stir fry and also to ensure you don’t burn your veg. If you are conscious about the oil making this a less healthy dish you can add water throughout instead. I did a bit of both (oil for taste and water for steam).

Step 5 – Once the veg is cooked through to your liking put the stir fry on a low heat, or even take it off the heat while you attend to the noodles. 3

For the rice noodles I had, I had to cover them in boiling water (from a kettle) for 3 minutes and drain them before adding them to my veg. However, you can buy fresh rice noodles which you can put straight into the frying pan to heat up.

Step 6 – Once the noodles are done, add them to the veg and mix through. Take the pan off the heat (if you haven’t already) and serve.

I prefer drier stir fry but you can add a sauce to if you like and switch out the veg and noodles. I often have stir fry with rice or cous cous.

Food: Light, Bright Salad

Salad MakingIt’s getting to be quite a warm summer, so today’s food recommendation is going to be, simply, Salad. I eat it a lot and I love it. I’m going to tell you the very basic recipe for my typical salad, which is light and easy to make, and hopefully it’ll keep your summer evenings as stress free as possible amidst all of this heat.

So you will need: Cucumber, Lettuce, Bell Peppers, Onion, Carrot, Cheese and Lemon Juice (quantities of each are entirely up to you).

Start with slicing the cucumber and then slicing it again so that it’s either like mine in the picture or diced.

Then dice the peppers, onion and carrot; I’ve used a red and a green pepper, and I only have white onion here but I usually add diced spring onions too.

Then chop up some lettuce, I have iceberg lettuce here.

Mix all of these vegetables together in a bowl. And then finally, to dish up, I put the salad on a plate or in a bowl, drizzle it with lemon juice and add Red Leicester Cheese on the side.

Time to eat, enjoy!
